Documents new retention periods: analytics data and assistant conversations are kept 365 days (so All time covers at most a year), and audit logs 455 days instead of one year. Also updates the matching mint-instructions topics (publish/analytics, access/team).

Based on a merged backend change that adds age-based retention for analytics, assistant and audit data. Draft because deletion starts only once the retention job is scheduled and the audit log policy change is confirmed; mark ready when it is live. Duplicate check: searched open and recent docs PRs for "retention", the author's and Ethan's PRs; none cover this.

Heads up: the backend change this PR documents was fully reverted in a later merge. The age-based retention for analytics data, assistant conversations and audit logs (365 and 455 days) is no longer in the code, so every edit here is now inaccurate. I recommend closing this PR. If retention lands again, a new docs PR can follow from that merge.
