Update apothecary and projectGenerator submodules (assimp 6.0.5)

Bumps the two submodules. No OF source changes: ofxAssimp and ofxAssimpModelLoader already compile against assimp 6.0.5 (MSYS2 CI has built them against 6.0.5 since #8589).

• App version / build number for all project types (macOS make: APP_VERSION / APP_BUILD for the app's Info.plist (from #3394) #8592, CMake build system for the core and apps (macOS, iOS, tvOS, Emscripten, Linux, Windows) #8586)
• Emscripten platform with the wasm32 / wasm64 option
• MSYS2 environment selector for msys2 / VS Code targets
• Directory walkers don't throw on symlinks or unreadable entries (projectGenerator (vs): crashes with STATUS_STACK_BUFFER_OVERRUN on addons containing symlinks #8545)
• VS: addon .c files compile as C; C++ files no longer inherit it

assimp 6.0.5 test (macOS arm64)

apothecary's macOS package with 6.0.5 isn't published yet, so I built assimp 6.0.5 locally with this apothecary (apothecary -t osx -a arm64 update assimp; source tarball SHA-256 verified) and swapped it into ofxAssimpModelLoader/libs/assimp. Each app's aiGetVersionMajor/Minor/Patch disassembles to 6 / 0 / 5 (5 / 4 / 3 for the baseline).

All five desktop assimp examples build and run: assimp3DModelLoaderExample, modelNoiseExample, ofxAssimpBoneControlExample, ofxAssimpAdvancedExample, ofxAssimpExample. Their warning and error output is identical to 5.4.3.

For a like-for-like comparison, I patched the examples locally (not committed) to pin the mouse rotation and noise, and to pin animations at 25%. Then I rendered every model with 5.4.3 and 6.0.5:
