The clean-up done in #1454 gave me he idea that the CI workflow files could be aligned and further improved. The changes are mainly cosmetic but improve readability and coherence.
In this PR:

• The Windows and Linux/MacOS steps were unified in build-cppfront.yaml as they already were in regression-tests.yaml.
• The execution policies were improved to avoid duplicate runs i some cases.
• The definitions of run configs were reorganized for readability into a seemingly tabular format.
• Names of the builds in both workflows were aligned.
