What changed in this PR
Prepares the release documentation for Braindecode 2.0.0, skipping 1.9 to reflect the breaking changes accumulated since 1.8.1.
Changes:
- Labels the unreleased changelog as 2.0.0 and restores the 1.8.1 enhancements to their own section.
- Updates the documentation switcher to 2.1 (dev) and 2.0 (stable), removing unavailable 1.7 and 1.6 archive links.

Prepares the 2.0.0 release through the monthly release workflow (
monthly-release.yml,bump=minor), as for 1.7.0. We skip 1.9: master has 330+ commits since 1.8.1, including breaking changes, so the next release is 2.0.0.docs/whats_new.rst: the unreleased changes are now underCurrent 2.0.0 (GitHub), the headingfinalizedates on release, with the "Breaking changes in 2.0" block at the top. The real 1.8.1 notes are back in their ownCurrent 1.8.1 (2026-08-31)section.docs/_static/versions.json: the switcher shows 2.1 (dev) and 2.0 (stable). Entries for archives that don't exist (1.8, 1.7, 1.6 return 404) are dropped.braindecode/version.pystays2.0.0dev0:finalizeturns it into 2.0.0 on the tag commit, and the bump PR sets master to2.1.0dev0.Before release, master was checked against 1.8.1 and its main downstreams (MOABB, Meta neuroai): #1514–#1531, facebookresearch/neuroai#323 and NeuroTechX/moabb#1337.
