chore: update project to Open Intelligent UI - #93

Rename the project across the app, docs, MCP server and repo links. CopilotKit's Open Generative UI API names stay as they are. Also links the Open Generative UI docs, updates the demo video, and swaps Claude Opus 4.6 for Opus 5.5 as the strong alternative model.

CopilotKit's Open Generative UI feature keeps its names (
openGenerativeUI,OpenGenerativeUIMiddleware,generateSandboxedUi), since those come from the CopilotKit packages and renaming them would break rendering. The internal helpers named after that feature are unchanged too.Service names in
render.yamlare also unchanged, since renaming them would create new services on Render.Testing
